This recipe is one of the more popular ones we've ever served here, simple but fantastic.

2 green peppers sliced julienne
sautee in stock pot with 1 crushed garlic clove and stick of butter
2 eggplants, peeled - and cut into scallop sized cubes
sautee with peppers until lightly cooked
add 3 cups of chicken stock
add 4 cans of coconut milk
add 4 oz jar of Thai Kitchen red curry paste (or similar)
add 3 tablespoons fish sauce
add 2 teaspoons of finely chopped lemon grass
add 1/4 cup of honey
3.5 cups of loosely packed basil leaves (slice if you like)
bring to simmer and simmer for 15 minutes
Add 2 lbs shrimp
2 lbs scallops (sea)
3.5 lbs catfish filets cut into pieces
cook, stirring and watch for shrimp to begin to turn white, when they are not quite cooked fully, shut off the heat and cover for 10 minutes and the fish cooks in the heat of the broth.

Serve over rice

Garnish with a little chopped tarragon

The Lagoon Lounge TC ohana party is penciled in for the weekend of May 20th.

Details on Events soon.

It's 2 days - ending up Sunday afternoon/evening at Clancy's of Bradenton (In the outdoor tiki lounge - yes - with tikis), a couple of miles from a terrific beach.

The Lagoon Lounge party will be on Saturday afternoon and night, the 21st, and I will have a serious spread for that shindig.

Come on down...there can never be enough people from Ohio here. I'm a buckeye myself.

Teach those Ohioans up there how to cook will you?
It's the land of bland.
"More salt, please."

Damn. Got a wedding rehearsal dinner that night and of course the actual wedding the next.

Well that's a very generous offer, and I'm wishing a certain family member would reschedule their wedding now. Perhaps next year, eh?

Swanky mentioned he might be able to persuade you to join us here in Kahikiville on the 28th of May for the HRHH. You interested?

Oh not in my house brother, not in my house. You should visit during "the seasons":

Shrimp boil season
Crawfish boil season
Smoked meat season
Fish fry season
Grilling season
Soup and stew season

Heheheheh!
