The new issue of Bon Appetit magazine, May 2006, covers the Caribbean. Some of the articles include Caribbean cocktails (plus recipes for spiced simple syrup), tropical desserts, and features "In Search of Real Rum". I found this article most interesting, since I have just found Goslings Black Seal Rum. Our mai tais now use Goslings (80 proof not 151) and Appleton Estate Extra rums, along with Trader Vic's Mai Tai mix and lime.
Though I tend to prepare more Hawaiian luau type dishes and drinks at my parties, there are many wonderful suggestions and great facts about rum and rum drinks.
