We were talking at work about YouTube and Google Video and the topic of permission came up. I know some people who were filmed for TV shows and history documentaries and they had to sign releases allowing those companies to use their images. How do sites like Google and YouTube get around this when people can upload any video they want even without the permission of the people in the video?

Because no one has asked them to stop. If you find yourself in one of the videos, you can ask them to take it down until releases can be had..... Not a perfect system, but the best we have so far.
