mixed greens w/ mango vinaigrette |

Mixed Greens w/ Mango Vinaigrette
1 ripe mango
1/2 cup freshly squeezed lemon juice (2 lemons)
3 tbsp olive oil
1/8 tsp crushed red pepper flakes, salt & freshly ground black pepper
4oz Boston lettuce (small head)
4 oz frisee (small head)
1 kirby cucumber
*vin: peel mango & slice sides away from the pit; slice one side into 1/8 inch slices & reserve.
chop remaining 1/2- place in blender w/ lemon juice & puree til smooth.
transfer into small bowl & whisk in olive oil.
add red pepper flakes & season w/ salt & pepper.
*combine lettuce, frisee, mango slices & cucumber slices in a large bowl & toss to combine with a few spoon fulls of mango vinaigrette.

you can substitute items to your taste or to availablity of items at your grocery store.

regular ol' cucumbers and leafy greens (ie: spring mix-in a bag) will do as well.
