a dry Mai-Tai, both oz of rum = Appleton Estate 21 y.o.

did I mention that my liquor store had the rum on clearance for $60 a bottle?

Wow $60 eh? I guess at that price it's a bit more reasonable to make a cocktail out of the 21-year!

plus, i made it dry to feature the rum (just a teaspoon of lime, 2 teaspoons each of curacao and orgeat).

Wife saw this tip on TV

Cut your lime in half
Then microwave it for 15 seconds
Then squeeze it
You get more juice

Out of limes

A Mai Tai made with 1oz of Appleton Estates 12 year old, 1 oz St. James Hors 'd Age, Orange Curacao (1/2 oz), Orgeat (1/2 oz , Fresh lime, 1 oz. and Turbanado sugar syrup (1/4 os).
Quite pleasant!
