Make tiki cocktails like a pro!

Just for kicks and giggles, I found these cocktail recipes in one of those "secret restaurant recipes" books. Have fun.

Hawaiian Punch (Claim Jumper)
1/2 oz Southern Comfort
1/2 oz Sloe Gin
1/2 oz Amaretto
3 oz Pineapple Juice
3 oz Orange Juice
splash 151-proof Puerto Rican Rum

Fill 16-ounce glass with ice. Add ingredients in order without stirring or shaking. Garnish with a pineapple slice and cocktail cherry speared on a paper umbrella.


Mai Tai (Claim Jumper)
2 oz Light Puerto Rican Rum (Castillo)
6 oz Claim Jumper Mai Tai Mix *(see below)
splash Dark Jamaican Rum (Myers')
splash 151-proof Puerto Rican Rum (Bacardi)

Fill a 16-ounce glass with ice. Add light rum and mai tai mix. Float dark and 151 rums. Garnish with a pineapple slice and cocktail cherry speared on a paper umbrella.

* Mai Tai Mix
1/4 cup Orange Juice
1/4 cup Pineapple Juice
1/4 cup Passion Fruit Juice
2 tblspn Maraschino Cherry Juice
1 1/2 tblspn Simple Syrup

Mix ingredients together. Makes about 1 cup.


Tropical Storm (Claim Jumper)
1 oz Passion Fruit Juice
1 oz Grenadine
1 oz Coconut Rum
1 oz Dark Jamaican Rum (Myers')
1 oz Light Puerto Rican Rum (Bacardi)
2 oz Sweet & Sour
2 oz Orange Juice
Splash 151-proof Puerto Rican Rum (Bacardi)

Pour passion fruit juice and grenadine into 16-ounce glass. Add ice. Pour in rums and then the sweet & sour and orange juice. Float 151 rum. Garnish with orange slice and cocktail cherry speared on a toothpick.


Hawaiian Volcano (TGI Friday’s)
1 oz Vodka
1 oz Amaretto
3/4 oz Southern Comfort
2 oz Pineapple Juice
2 oz Orange Juice
1/2 oz Fresh Lime Juice
3/4 oz Grenadine

Shake all ingredients in a cocktail shaker and pour into a 14-ounce glass filled with ice. Garnish with an orange slice on the glass' rim, and lemon and lime wedges in the drink.


Shark Tooth (Joe's Crab Shack)
1 oz Light Hawaiian Rum (Whaler's)
1/2 oz Melon Liqueur (Midori)
1/2 oz Banana Liqueur
3 oz Pineapple Juice
3 oz Sweet & Sour
1/2 oz Grenadine

Shake ingredients with crushed ice. Pour into a 16-ounce glass. Add ice to fill. Garnish with an orange wheel and cocktail cherry speared to a toothpick.


Hurricane (Hard Rock Cafe)
1 1/2 oz Bacardi Light Rum
6 oz Mai Tai Mix *(see below)
3/4 oz Myers' Dark Rum
3/4 oz Amaretto

Fill a 23-ounce glass with ice. Add ingredients. Garnish with lemon wedge and cocktail cherry.

* Mai Tai Mix - According to the book, it's the same mix as Claim Jumper's. Who knows....


Sunburn (Chili’s)
1 1/4 oz Spiced Rum (Captain Morgan)
3/4 oz Dark Jamaican Rum (Myers')
3/4 oz Triple Sec
2 oz Cranberry Juice
2 oz Pineapple Juice
2 oz Sweet & Sour

Shake all ingredients in a cocktail shaker and pour into a 16-ounce glass filled with ice. Garnish with a cocktail cherry.

I wish I knew how the old CJ's chain in Florida (Calico Jack's) used to make their "Jungle Juice."

all i know is they made me a giant-killer back in the '80's...
